This refreshing Coconut + Berry Ice Cream is made with just a handful of ingredients that you can feel good about. Bursting with flavour it’s refreshing, plant based and free from refined sugars. A vibrant treat straight from the freezer.


Ingredients:

  • 3 cups of frozen mixed berries
  • 1 + 1/4 cups of canned coconut cream, room temp - not refrigerated
  • 2 tsp of vanilla extract
  • 1 tsp of maple syrup (optional)
  • 1/2 cup of coconut flakes (optional)

Method:

  • Add all ingredients to a food processor.
  • Pulse until relatively smooth and creamy, about a minute or two.
  • Line a loaf pan with parchment paper. Add ice cream in an even layer, cover and freeze.
  • For soft serve consistency, eat immediately or freeze for an hour or so. For a hard scoopable ice cream, freeze for 3-4 hours.
