This Green Goddess Bowl comes together in just 15 minutes, perfect for when you want something quick, fresh, and deeply nourishing. Green Goddess Bowl
Serves 2
INGREDIENTS:
2 tbsp oil2 tbsp sesame oil1 tbsp maple syrup1 tbsp tamari1 tsp ginger puree or ½ inch fresh, mincedJuice of ½ a lime1 garlic cloves, minced1 chilli, minced (optional)-100g brown rice noodles, Thai style1 packet mixed seaweed salad (dulse, nori, kombu, wakame)*1 courgette, spiralised (or 1 packet pre-prepared)½ cucumber, shaved into thin ribbons using a vegetable peeler2 handfuls edamame, shelled2 spring onions, roughly chopped1 -2 avocados, roughly choppedSmall handful coriander, roughly chopped (optional)2 tbsp mixed sesame seeds+ add your favourite protein; tofu, tempeh, chicken, prawns
TO SERVE
2 wedges of lime to serve
METHOD:
To make the dressing, place the oil, sesame oil, maple syrup, tamari, ginger, limejuice, minced garlic and chilli in a clean jam jar with the lid firmly attached and shaketo combine.
2.Prepare noodles as per the instructions on the back of the packet.
3.Prepare the seaweed as per the instructions on the back of the packet.
4. Place both noodles, seaweed, cucumber, edamame and spring onion in a bowl andtoss together with the dressing.
5.Divide over two bowls and top with the avocado, coriander and sesame seeds.
6.Finish with wedges of lime and serve.
