This one pot broken lasagne is comfort food you can feel good about. Packed with clean protein, fibre and phytoestrogens, it supports hormone detox and improves satiety while also helping to balance blood sugar. This is one to save for your next cosy night in.

INGREDIENTS:

350g organic chicken mince
250g of cooked puy lentils
1 onion diced
2 cloves of garlic, minced
2 carrots
2 sticks of celery
8 cherry tomatoes
2 sprigs of rosemary
1 sprig of thyme
400g of passata
200ml of chicken stock or bone broth
100g of lentil lasagne sheets - I used Profusion
1 ball of organic buffalo mozzarella
A generous grate of parmesan

For the kale pesto:

2 kales leaves
1 bunch of basil
A handful of cashews
1 lemon - juiced
3-6 tbsp of olive oil
Salt and pepper

METHOD:

1. Start by frying off the garlic, onions, celery and carrots until browned.

2. Add the tomatoes, chicken mince and herbs. Cook until the mince has browned.

3. Add the puy lentils, passata and chicken stock, combine well and let this simmer for 10 minutes.

4. Pre-heat the grill to 180.

5. Break up your lasagne sheets and add into the mix, make sure they are covered and not poking out of the liquid.

6. Cook for a further 10-15 minutes, until pasta has softened nicely.

7. Tear your mozzarella and scatter it all over, then grate your parmesan. Pop under the grill until the it melts and becomes golden brown.

8. For the pesto, add all the ingredients to a blender and blitz until smooth. Add to the top just before serving.
