Effortless, nourishing, and ready in minutes. These Waldorf Salad Lettuce Cups are one of our Founder's, Rhian Stephenson’s go-to lazy lunches. Perfect for working from home or when you only have a few moments to spare. Crisp, refreshing, and deeply satisfying, they’ll keep you satiated and energised all afternoon.


FOR THE WALDORF SALAD:

  • 2 x chicken breasts, steamed, grilled or sautéed
  • 1 x red apple, chopped into cubes
  • 1 cup walnuts, chopped
  • 3 stalks celery, diced
  • 1 cup white beans
  • A few spring onions, sliced

FOR THE DRESSING:

  • 4 tbsp runny tahini
  • 1 tbsp plain yogurt
  • 2 tbsp white balsamic vinegar
  • 2 tbsp lemon juice
  • Salt + pepper to taste
  • Handful of fresh dill, optional
  • Water, to desired consistency 

METHOD:

  1. Add all of the salad ingredients together in a bowl and toss to combine.
  2. For the dressing, feel free to play around with the flavours depending on how you like it. So, start with the above and adjust as you’d like. Add water slowly, and whisk until you get the right consistency. Taste, and adjust from there.
  3. Fill the lettuce cups with the chicken mixture, drizzle with dressing, and enjoy!
