You may be desperate for a break from indulgent meals and technical cooking. This Mediterranean Salmon, Squash, Tomato + Olive Traybake is the perfect way to reset and a simple one to prepare. This combination is packed with protein, fibre, healthy fats and antioxidants to recalibrate taste buds, balance blood sugar levels and feed your gut microbes.
Mediterranean Salmon, Squash, Tomato + Olive Traybake
Ingredients:
- 1 side of salmon or 2 salmon filets
- 1 butternut squash or pumpkin, cut into wedges skin on
- 2-3 handfuls cherry tomatoes
- 4-5 sun-dried tomatoes, roughly chopped
- 1 x (400g) tin chickpeas and juices
- 3 tbsp kalamata olives + juices pitted
- 1 tbsp olive oil
- Juice of 1 lemon
- 1 tsp salt + pepper
- 1 tsp dried oregano or fresh if you can find it
- 1 tbsp balsamic vinegar
- 10 basil leaves
- 1-2 tbsp toasted pine nuts
- 1 packet of rocket (approx 60g)
Method:

Preheat your oven to 200°C/180°C fan.

Toss all the ingredients together and place in a suitable roasting tray.

Bake uncovered for 30-35 minutes until the squash have cooked and the tomatoes have begun to caramelise.

Top with basil and toasted pine nuts.
