After a night out, your body deserves some serious TLC, and what you eat can make all the difference. This breakfast burrito isn’t just delicious and EVERYTHING you could possible want - it’s packed with nutrients to help you recover. Protein from eggs and chicken sausages helps repair muscles, while black beans and avocado provide fibre and healthy fats to stabilise blood sugar and support digestion. Spinach and cherry tomatoes load you up with antioxidants. A breakfast that’s both comforting and functional - the perfect fuel to get you back on your feet after a late night.
The Ultimate Breakfast Burrito - Serves 4 Burritos
Ingredients:
- 4 eggs
- tsp of chilli powder
- ½ tsp of paprika
- ½ tsp cumin
- ½ tsp of ground coriander
- 4 chicken sausages (ideally organic)
- 1 can of black beans, drained and rinsed
- 8 handfuls of spinach
- 2 avocados, stone removed and mashed
- 8 cherry tomatoes, chopped finely
- 30g of coriander chopped
- 1 lime – juice of
- 1 tsp of jalapeños, chopped finely
- 4 wraps
- 4 tbsp pickled red onions
- Your favourite hot sauce, my favourite it Grandma’s Hot Sauce
Method:

Start by frying of your chicken sausages for 10-12 minutes. In the meantime, make your guacamole by adding avocados, cherry tomatoes, jalapeños and coriander. Squeeze the lime and season accordingly. Slice the sausages in half and set aside,

In a bowl mix the eggs, black beans, chilli powder, paprika, cumin, ground coriander, salt and pepper. Whisk until combine.

Add the egg mixture to pan and slowly stir into scrambled eggs. Add spinach and allow to wilt down. Its best to cook the eggs to a drier consistency rather than wet.

In a clean pan heat your wraps on both sides.

To your wrap add guacamole to the base, followed by the sausages, a couple of spoonfuls of egg/black beans. Top with 1 tbsp of pickled red onions and your favourite hot sauce.

Fold your wrap (don’t by shy, look on YouTube how to wrap, it's a literal art form) place it back in the pan and heat on both sides until browned and a little crispy. Repeat 3x.
