Summer social calendars often mean that a little indulgence is inevitable, but recovery can still be intentional. This high-protein wrap is your hangover hero, with eggs, asparagus, creamy feta and broccoli sprouts that work to detox, revive and restore.
INGREDIENTS:
1 bunch of asparagus
1 spring onion, chopped
4 eggs
1 wrap
1 tbsp of feta cheese
Handful of broccoli sprouts
Salt + pepper
METHOD:
1. Start off by frying the asparagus and spring onion in olive oil for 5 minutes.
2. Whisk your eggs and season.
3. Add the egg mix to the pan, set for 2 minutes.
4. Place the wrap on top and flip.
5. Crumble the feta and add in the broccoli sprouts. Fold the wrap over and cook for an additional 5 minutes. Until the egg has set and the wrap is nice and crispy.
6. Serve with a handful of rocket (if you can handle it).
