An Easy Summer Salad
This Easy Summer Salad contains crisp greens, seasonal produce, and a light, tangy dressing which come together in minutes, leaving you with a plate that feels like self-care. This salad is hydrating, mineral-rich, and deeply satisfying, proving that eating well can be as simple as it is delicious.
Ingredients:
- 400g black beans drained
- 2 large handfuls baby spinach, roughly chopped
- 2 large handfuls of romaine lettuce, roughly chopped
- 500g heritage tomatoes chopped into large chunks
- ½ cucumber halved lengthways, sliced on an angle
- 1 mango peeled and chopped into chunks
- 1 red onion halved and finely sliced
- 6-8 radishes, sliced
- 2 avocados, peeled and sliced
- Handful of herbs (reserved from the dressing)
- Add extra protein of choice: chicken, prawns, tofu, tempeh
For the dressing
- Large bunch of mint
- Small bunch of coriander
- Small bunch of basil
- 1 green chilli deseeded and chopped
- 1 small garlic clove
- 100ml extra virgin olive oil
- 2 limes zested and juiced
- 2 tbsp white wine vinegar
- 2 tsp maple syrup
Add the dressing ingredients to your blender. Drizzle over your salad and enjoy.
