Matcha Pancakes With Almond Yoghurt + Blueberry Compote

PANCAKE INGREDIENTS:
2 cups almond flour
4 eggs
1/2 tsp baking powder
1/2 teaspoon baking soda
8 teaspoons matcha powder - use less for a more subtle flavour
¼ teaspoon salt
2 tsp coconut sugar
¼ cup coconut oil
¼ cup plant milk - oat, almond, cashew
1 teaspoon vanilla extract
For the topping:
2 handfuls of blueberry
1/2 lemon
2-3 tbsp almond yoghurt
METHOD:
Toppings: Almond yoghurt + blueberry compote
1. Make the coulis by adding blueberries and 1/2 a lemon juice to a pan on a low heat. Stir until the right consistency.
2. Add all the pancake ingredients to a blender and pulse until smooth.
3. Add coconut oil to pan, a medium to high heat.
4. Spoon 2 tbsp of the mixture into the pan, cook for 2-3 minutes on one side, then flip and cook for an additional minute.
5. Top with blueberry compote and almond yoghurt.
