Cookie Wars

Sweet but competitive, just like us. May the fluffiest, chewiest, most delicious win. 

Everyone loves a bit of healthy competition, so we're bringing you three different recipes to start your own delicious holiday bake-off. Gluten, dairy and refined-sugar free (what else?!), these cookies are incredibly easy to make and even easier to eat. 


Chocolate Chip Cookies

INGREDIENTS

320g Cashews
225g Oat Flour
180g Maple Syrup or another natural sweetener 1 tbsp Vanilla Extract
1/2 tsp Salt
1 tbsp Coconut Sugar (Optional)
125g 85% dark chocolate chips

METHOD
Preheat your oven to 180°C fan. Using a NutriBullet or another high speed blender, blitz the cashews to a fine flour consistency. Be careful not to over blend as they will cream and become soft and buttery very quickly.

Add to a large bowl with the oat flour, maple syrup, vanilla, salt and cacao nibs. Using your hands bring the mixture together to form a dough.

Shape the cookies into rounds and then press to flatten slightly. Place on a lined baking tray and bake for 15 minutes or until slightly browned on top.


Tahini, Chocolate + Coconut Cookies

INGREDIENTS

320g Cashews
225g Oat Flour
180g Maple Syrup or another natural sweetener 1 tbsp Vanilla Extract
1/2 tsp Salt
1 tbsp Coconut Sugar (Optional)
125g 85% dark chocolate chips 
30g Tahini
20g Desiccated Coconut
 

METHOD
Preheat your oven to 180°C fan. Combine the ingredients together as per the instructions above and add the tahini and the coconut.

Shape the cookies into rounds and then press to flatten slightly. Place on a lined baking tray and bake for 15 minutes or until slightly browned on top. 


Oatmeal Banana Raisin Cookies

INGREDIENTS

1/3 cup coconut flour, you could also use buckwheat flour or all purpose gluten free flour 
2/3 cup oats
2/3 cups coconut oil 
1 tbsp cinnamon
1/4 tsp baking powder
2 ripe bananas
1 egg
1 tbsp ground flax (optional) 
2 tbsp maple syrup
Raisins - to your liking; we used 1/2 cup. 

METHOD
Preheat the oven the 180°C fan. Before you start with the ingredients, put your raisins in a bowl and cover with boiling water - this will plump them up and give a nicer flavour. 

Mix flour, oats, cinnamon, baking powder and flax in a bowl, then in a separate bowl mash the bananas and mix with the egg and maple syrup. 

Drain the raisins and pat dry. Mix everything together and form into cookies.
Bake for 8-12 minutes, depending on the shape and size of the cookie.
