Cinnamon Spiced Salmon

Cinnamon on salmon might sound like an odd pairing but trust us - it's delicious.

One of our favourite recipes from The 28-Day Reset, this dish is super easy to make and perfect for an easy weeknight dinner. Pro-tip, make a few extra fillets for delicious Omega-3-rich lunches throughout the week.


Ingredients 
(serves 2)

2 pieces salmon (approx 300g)

1 tsp ground cumin

1 tsp ground cinnamon

1 tsp ground sumac

Juice of ½ an orange

1 tsp lime zest

Scant squeeze of lime juice

2 tbsp extra virgin olive oil

Sea salt

 

Method

Preheat the oven to 200°C. 

Mix the ingredients together in a bowl and then spread over the salmon.

Let it sit for at least 15 minutes before you roast it, but you can leave this for the whole day if you’d like a deeper flavour. If you do this, omit the lime juice and add it to the end so the acid doesn’t start to cook the salmon.

Place the salmon on a roasting tray and per inch of thickness, cook for 15 minutes for medium, or 12 minutes for medium-rare. Serve with your choice of sides and enjoy.
