The ARTAH Power Bowl
This power bowl is super versatile and easy to build using leftovers, precooked grains and lentils, and whatever veg is laying around in the fridge. We use this formula on repeat to hit fibre, protein and phyto goals:
- 2 handfuls of greens
- 3/4 cup cooked pseudo grains, lentils or beans. We used buckwheat
- 2 handfuls of sliced veggies. We used cucumber, cabbage, carrot, and broccoli
- 100-150g fresh or leftover protein. We used salmon and prawns, but you could also use tuna, eggs, beef, chicken or whitefish
- 1-2 spoons of a booster: think beetroot hummus, avocado, organic feta or tahini cream
- Extra virgin olive oil and balsamic to dress
